My Life as a Vegetarian

Two weeks ago I started a change in eating that is still a mystery to everyone who knows me, including myself.

I became a vegetarian.  (Mostly.)

It was just something that I felt like I had to do.  (And just to be clear, it really has nothing to do with a new-found love for animals.)

The first week was kind of tough.  I craved meats that are not necessarily my favorites.  Like I remember being the grocery store - where there is an entire meat section - and for some reason I saw a bag of jerky and thought, "I could eat that entire bag in one sitting."  And it's not like I don't like jerky.  It's just that, of all the meat to crave, it was that.  Not a burger.  Not a pulled pork sandwich.  Not even a Costco Polish Dog.

The other part that made the first week quite difficult was driving to and from work.  There are roughly 3,967 fast food restaurants between my home and work, and I noticed every single one of them.

The craving the second week wasn't as bad.  I did have the urge to eat one of my kids' Dino nugget on Saturday night (once again, a meat that I don't normally eat, but craved) but I ate a quinoa burrito instead.  (It was actually quite good.)

I can tell you that I definitely do not starve as a vegetarian.  It's amazing how good-for-you foods fill you up.

My goal is to go entirely meat-free until Thanksgiving, and then eat some turkey.  (Sorry, I just can't get into the whole Tofurkey thing.)

And for those of you wondering, yes, I am keeping track of my protein, vitamins and minerals.

My co-workers always ask me that.  I find it funny because they didn't seem to care about my vitamin and mineral levels when I was downing Double-Doubles with cheese.  Yet, I mention that I'm going to start eating healthier and all of a sudden people are really worried about if I'm getting enough vitamins.

I do appreciate the worrying, but trust me, I've done my homework on this.
