If you're like me - and I hope for your sake that you're nothing like me - salads are not number one on your list of things to eat. Sure, with enough blue cheese dressing, croutons and Bac-Os®, any salad can be amazing.
However, when you're watching your calorie, fat and cholesterol intake like me, you can't afford to load up your salads with those things to make them worth eating.
Well, that changed for me last night. For dinner, we had my wife's world famous spinach & artichoke pasta shells with a side salad. I knew that the shells had enough calories to cover my needs, so I didn't want to add anything else to the salad, but I was dreading eating a salad without dressing.
Then my brain finally worked.
I always keep a bottle of jalapeños in my fridge, so I wondered what salad would taste like with some of those and their juice.
The answer is, WICKED AWESOME!
Obviously, if you're not a fan of jalapeños, this isn't for you. Also, be warned that the sodium content is a little high, but if you're looking for a nice calorie-free, fat-free salad dressing with a little kick, bottled jalapeños are for you. (I really like the Star brand that you can get at Costco.)
